Croissant Cinnamon Roll French Toast

Ingredients
- 4 butter croissant rolls
FOR CINNAMON BUTTER
- 50 grams butter
- 1/4 cup brown sugar
- 1 tablespoon cinnamon powder
- 1/2 cup chopped walnuts
CARAMEL SAUCE
- 1/4 cup brown sugar
- 1-1/2 tablespoons light corn syrup
- 50 grams butter
- 1/4 cup cream
- Few drops vanilla essence
CREAM CHEESE GLAZE
- 1/2 cup Cream cheese
- 1/4 cup Icing sugar
- 2-3 tablespoons Milk
SOAKING MIXTURE
- 3 eggs
- 3 tablespoons sugar
- 3/4 cup Milk
- 3 tablespoons cream
- 1/2 teaspoon cinnamon powder
- 1/2 teaspoon vanilla essence
Instructions
- In a bowl mix together softened butter, brown sugar, cinnamon and walnuts. Spread the cinnamon butter on a sheet of parchment and freeze till firm. Once frozen break it into shards.
- Make a small slit in the middle edge of the croissant and insert the butter shards in it.
- Now prepare the caramel sauce-cook together butter, brown sugar, light corn syrup in a saucepan. Cook till slightly thick in consistency. Finally add in few drops of vanilla essence.
- For cream cheese glaze- whip cream cheese and icing sugar till smooth now add in milk. Mix well.
- For the soaking mixture whisk together eggs, milk, cream and sugar. Now dip the cinnamon butter stuffed croissants in this mixture. Keep flipping till the croissants get soaked in it.
- Heat some butter in a skillet and place the French toasts in it. Cook on medium heat on one side. Flip and cover. Continue to cook covered for 2-3 minutes at low heat.
- Remove on a platter and drizzle caramel
- Sauce and cream cheese glaze on top.
