ROAST BEEF BURGER

Ingredients
  1. ROAST BEEF
  2. 500 grams chuck roast cut
  3. 4 tablespoons vinegar
  4. 5 tablespoons soy sauce
  5. 3 tablespoons oil
  6. 1/2 tablespoon mustard paste
  7. 1-1/4 teaspoon black pepper
  8. 1-3/4 teaspoon salt
  9. 1 teaspoon dried parsley
  10. 1 tablespoon ginger garlic paste
  11. BURGER SAUCE
  12. 1/2 cup mayonnaise
  13. 2-1/2 tablespoons mustard paste
  14. 3 tablespoons ketchup
  15. 1/2 teaspoon black pepper
  16. ROAST BEEF BURGERS
  17. 4 brioche buns
  18. 1 cup shredded roast beef
  19. 75 grams butter
  20. Sliced onion as desired
  21. 4 cheese slices
Instructions
  1. Add all roast beef ingredients in a bowl and marinate beef in it. Mix well and use a fork to prick the roast piece so the marination gets in well. Now cover the bowl and marinate for 3 days. Keep turning the meat piece on all sides during these 3 days.
  2. After 3 days transfer the meat along with all the marination to a pot. Add more water approx 1-1/2 litres and cook covered on the lowest flame possible for 8-9 hours. You will have to keep adding water as it dries many times during the slow cook process. After 8-9 hours the meat would become fork tender and you would have to let the water dry in the pan only. Now take the meat out. Cut and shred as required.
  3. To prepare burger sauce Mix together mayonnaise, mustard paste, ketchup and pepper. Mix well and set aside.
  4. For burger filling heat some butter in a heavy bottomed pan and add some shredded roast beef to it. Stir fry for a couple of minutes till it gets a nice colour and edges of the shreds get a little crisp. Sprinkle some black pepper as well.
  5. Now in the same pan after removing fried roast beef add a little more butter and sauté sliced onions for 1-1/2 minutes till tender. Remove onions from the pan.
  6. To the same pan add more butter, keep the flame lowest and now place burger bottoms in it. Gently smear them across the pan so the butter and flavours in the pan get to the buns. Now spread the sauce on each bun. Place fried roast beef on each and top each with a cheese slice. Remember the flame has to be the lowest now cover the pan and let the cheese melt for around 2 minutes. Now take the burgers out on a platter. Add sautéed onion on top. And dollops or sauce on top of onions and cover with burger tops.
