Last Sunday, as lethargic as I could be, just didnβt feel like cooking much. That some minced chicken and beef in my freezer and thought of creating something super quick and yummy.
Chapli Kebabs come to my mind instantly when I think of easy to make and yummy fried items. Just dump all the ingredients in a food processor…..blitzz blitzzzz…….and there you go with the most succulent and juicy kebabs of your dreams. π
Chaplisss are still the heart of every Pakistani Foodie. The most loved fried meat in Pakistani Cuisine. Has it origin in Pakistani province of KPK but over the years this has evolved into many other variants.
However I managed to create Chapli kebabs this weekend with such precision that it replicated the taste of the authentic Peshawari Chapli Kebabs but without much ado and hassle. Itβs quick and just like the way you get them in bazaaar. π
So lets get started…………….!π©π»βπ³
- 500 grams minced beef with fat (All water drained)
- 1 tablespoon ginger garlic paste
- 4 inch large piece ginger
- 4 medium size onions
- 2 stalks spring onion
- 5-7 green chillies mixes large small
- 1 tablespoon dried pomegranate seeds (Anaar Dana)
- 2-1/2 tablespoons roasted ground coriander seeds
- 1 tablespoon roasted ground cumin
- 1 tablespoon red chilli flakes
- 1 teaspoonful chicken powder
- 1/2 teaspoon black salt
- 1 teaspoon salt or to taste
- 2 medium sized tomatoes seeded removed and cut into wedges
- Handful of coriander leaves
- 2 eggs
- 2 tablespoons cream
- 4 tablespoons Makai ka Aata (fine ground cornmeal)
- A good pinch baking soda
- TO FRY
- Tomato slices as required
- 3 tablespoons Ghee
- 1 tablespoon butter
- Peel onions and process them in the chopper till finely minced.
- Remove chopped onions into a bowl and to the same chopper add spring onions,ginger, green chillies and Anaar daana. Now process the chopper once more till all are fine chopped.
- Now add the minced beef.
- Take the chopped onions between your palms and squeeze out all the water from them and add them to the chopper too.
- Start adding all the ingredients in the chopper from roasted ground coriander to baking soda. Process till all things are well mixed with the mince.
- Now grease your hands as well as some platter which you will use to lay your shaped kebabs on.
- Take a good amount of meatball in your palm and flatten it. Pat the meatball with your fingers and shape them into irregular kebabs. Embed a slice of tomato in each kebab.
- To fry heat ghee and butter together in a pan and carefully place the kebab tomato side down in the pan. Cook on medium flame 5-6 minutes each side then flip and cook for 6-7 minutes on the other side.
- Serve with chutney and roti.
