Do you often find yourself clueless when it comes to leftover chicken from a day old curry or some leftover grilled chicken or tikka etc? Well I like to make some creative use of the leftovers when it is about kitchen management. I love making things that can be consumed easily and are enjoyed by kids and adults alike.
So I had some leftover chicken in my fridge and I thought of making some yummy Tea sandwiches with it.
The recipe that I am sharing with you is of a chicken spread that you can make with leftover chicken and then use it in sandwiches or burgers. This spread stays good Upton a week in the fridge in an air tight container. I am quite certain after trying this recipe you will stop buying those unhealthy chicken spreads from the market.
These sandwiches are most loved in my house. Very basic simple yet flavourful. A must have with your evening tea or coffee.
- 3/4 cup shred of leftover cooked or boiled chicken
- 50 grams softened butter
- 1/4 cup mayonnaise
- 3-4 tablespoons ketchup
- 3/4 teaspoon black pepper
- Salt to taste
- 8 sandwich bread slices
- Roughly shred leftover cooked chicken.
- Place the chicken and all the ingredients in a food processor and process till all are well combined.
- The chicken spread is ready. Now cut the edges of bread slices and apply the spread on them. Cover with another bread slice and cut each sandwich into two triangles.
- Enjoy with tea or coffee.
Found this dish just in time. I made chicken yesterday and had leftovers, it pains me to waste food so I gave this recipe a shot making it this morning to take give the family to take on their trip and they loved it. Was easy to pack in sandwich bags and lunch boxes in a cooler.
