A quick easy summer fix. Light, refreshing and a perfect crowd pleaser-here is my version of the famous Pineapple and biscuit dessert. I did keep the conventional elements same-just stepped the dessert up with some creamy custard and milk soaked biscuits, which taste amazingly divine in the ensemble when eaten chilled. So skip all the wait, gather the ingredients and assemble yourself a dish or may be a few shot glasses of these toothsome dessert.

Ingredients
  1. 1 cup water
  2. 1 packet pineapple jello
FOR VANILLA CUSTARD
  1. 2 cups milk
  2. 4 tablespoons vanilla custard powder
  3. 6 tablespoons sugar
  4. 1/2 cup full fat cream
TO ASSEMBLE
  1. 2 packets cornstarch biscuits (Marie)
  2. 1/2 cup milk
  3. 1/4 cup condensed milk
  4. 1 cup chopped toasted walnuts
  5. 1 cup crushed pineapple
TO DECORATE
  1. Pineapple slices
  2. Glazed cherries
  3. Chopped walnuts
Instructions
  1. In a cup of boiling hot water dissolve pineapple jello crystals and pour in small semi sphere mould or any other moulds to set.
  2. Prepare custard-Bring 1-1/2 cups of milk to a boil. Dissolve custard powder in remaining 1/2 cup milk at room temperature. Pour the custard milk slurry in boiling milk, add sugar and turn off the flame and whisk it very well to a thick smooth consistency. Cover it will a cling wrap with the plastic touching the surface of the custard and let it cool. Once the custard cools whisk in cream.
  3. In a flask stir together milk and condensed milk.
  4. In a large dessert dish spread out a layer of broken cornstarch biscuits. Pour some milk mixture over biscuits. Next, spread a layer of toasted chopped walnuts. Cover it with a layer of whipped custard. Spread a layer of crushed pineapples, more walnuts and broken biscuits. Sprinkle some more milk for the biscuits to get soaked. Cover with a final layer of custard.
  5. Decorate with jello rounds, glazed Cherries, pineapple slices and chopped walnuts.
  6. Refrigerate for 3 hours. Serve chilled.
