An interesting twist to the traditional Pasanday. Irresistibly tender juicy steak marinated in desi spices and fried to perfection. Do try this recipe and I am sure your family would fall in love with this version of beef pasanday.

Ingredients
  1. PASANDAY FRY | PAARCHA KABAB
  2. 350 grams beef Pasanday or paarchay
  3. 1-1/2 tablespoons papaya paste
  4. 1 teaspoon meant tenderiser
  5. 1/2 teaspoon turmeric
  6. 1-1/2 teaspoon red chilli powder
  7. 1 teaspoon red chilli flakes
  8. 1 teaspoon coriander powder
  9. 1 teaspoon garam masala powder
  10. 2 teaspoons roasted ground cumin
  11. 1 teaspoon salt
  12. 1/2 teaspoon Caram seeds/ Ajwaen
  13. 1 teaspoon Chaat masala
  14. 1 tablespoon kasuri methi
  15. 4 tablespoons lemon juice or white vinegar
  16. 2 tablespoons ginger garlic paste
  17. 3 tablespoons oil
  18. 3 tablespoons gram flour / Besan
  19. 2 tablespoons rice flour
  20. 1/2 cup water or as required
Instructions
  1. Mix all ingredients except for meat in a mixing bowl.
  2. Now add meat to the marinade and let rest for 5-6 hours so the meat tenderises well.
  3. Add some oil in a pan and shallow fry marinated beef fillets in single layer. Let cook on one side on medium low flame for 7 minutes, then flip the fillets. Now cover the pan and let cook on medium low flame for another 10-12 minutes.
  4. After 12 minutes remove lid and turn flame to high now cook on both sides fill for another one minute till brown and charred.
  5. Serve with salad and chutney.
