CHOCOLATE HAZELNUT AND CARAMEL CHEESECAKE

Ingredients
  1. BASE
  2. 200 grams digestive biscuit crumbs
  3. 100 grams butter
  4. CHEESECAKE TOPPING
  5. 200 grams cream cheese
  6. 200 grams whipped cream
  7. 1/4 cup castor sugar
  8. 1 teaspoon vanilla essence
  9. 2 tablespoons gelatine
  10. 3 tablespoons Nutella
  11. 3 tablespoons caramel sauce
  12. CARAMEL SAUCE
  13. 50 grams butter
  14. 3/4 cup brown sugar
  15. 1/2 cup cream
  16. CHOCOLATE GLAZE
  17. 100 grams dark chocolate chopped
  18. 1/2 cup cream
  19. 3 tablespoons caramel sauce.
  20. 1 tablespoonful Nutella
Instructions
  1. Press down the biscuit crumb and butter mixture in the base of a loose bottom round pan . Let set in the freezer for half an hour.
  2. For caramel sauce- heat all the ingredients till smooth and well combined.
  3. Whip cream and set aside. I'm another bowl, whisk cheese, sugar, activated gelatine, caramel sauce and Nutella. Finally fold in whipped cream.
  4. Pour the cheesecake mixture over the base and let set for about 4-5 hours in the fridge.
  5. Heat all the ingredients for the glaze in a saucepan and pour over the set cheesecake.
