Trust me I was so craving for that traditional BBQ flavoured Bihari Qeema but hard luck I didn’t have the Ingredients to make the traditional version. More over that one requires a lot of marination time while I wanted things to get done in a jiffy. So I made use of things that I had in my kitchen that day and created this Yummy Instant Dum Qeema Recipe.
Trust me you would feel you are enjoying your favourite traditional Bihari BBQ once you try this recipe. Without any yogurt and papaya paste this recipe tends to give the same intense flavours with just some of the basic spices that we all have in Our Desi kitchens.
The best part about this recipe is that we can freeze this marinated mince for weeks and whenever we are out of options to cook or have not much time to cook something from scratch we can just bring the frozen marinated mince out of the freezer , thaw it and just dump it in the pot with some hot oil.

- FOR MARINATION
- 500 grams chicken mince
- 3 tablespoons oil
- 1-1/2 tablespoons ginger garlic paste
- 2 medium tomatoes puréed
- 1 teaspoon black pepper
- 1/2 teaspoon turmeric
- 1 teaspoon red chilli flakes
- 1 teaspoon chicken powder
- Salt to taste
- 1-1/2 tablespoons roasted ground coriander
- 1 tablespoon roasted ground cumin
- 4 tablespoons cream
- 2-3 medium sized onions sliced and fried golden brown
- 1 teaspoon garam masala
- 1 tablespoon tandoori chicken masala (Shan)
- 1 tablespoon canned tomato purée
- TO COOK
- 1/4 cup oil
- Coal to smoke
- Chopped coriander to garnish
- Slice onions and fry in little oil till golden brown.Set aside.
- Blend tomatoes to make a smooth purée with skin.
- Now add all the ingredients to the minced chicken in a bowl, mix well and let rest for 10 minutes.
- At this point you can either freeze this marinated mince for later use or cook it right away.
- To cook heat oil in a pan and add the marinated chicken mince to the hot oil.
- Stir fry at high flame for 1-2 minutes then cover the pan and reduce the flame to medium and let cook for another 7-10 minutes. Once again remove the lid and stir fry at high flame for another 5 minutes till all water dries and oil separates.
- Now create a well in the centre and place an aluminium or steel bowl. Keep a burnt coal in it and drip few drops of oil over it. Cover the pot and smoke the Qeema for 2 minutes while the flame is at the lowest.
