Ingredients
  1. MARINATION
  2. 1.5kg mutton leg cut into big pieces
  3. 2 large pieces of ginger (approx 4inch each)
  4. 8-10 large green chillies
  5. 1-1/2 cups yogurt
  6. 3/4 cup fruit vinegar (preferably black grape)
  7. 1/2 cup soy sauce low sodium light
  8. 1-1/2 teaspoon coarsely ground black pepper
  9. 1-1/2 teaspoons chicken powder (or then use brown sugar same quantity)
  10. 1/2 cup oil
  11. 2 tablespoons mustard paste
  12. FOR ROASTING
  13. 1 baking tray
  14. Aluminium foil as required
  15. Oil to grease tray
Instructions
  1. Wash and pat dry mutton pieces.
  2. Now apply all the marination ingredients to the meat. Cover with a plastic wrap and refrigerate for 3 days to marinate well. Keep pricking the meat and tossing the pieces in marination every now and then.
  3. On the third day grease a baking tray with oil and spread the marinated mutton pieces on it along with all the marinade. Tent with aluminium foil and bake at 130°C for 1 hour 30 mins. Keep turning the pieces after every 20 mins.
  4. Once done serve with your favourite sides.
