Ingredients
- MARINATION
- 1.5kg mutton leg cut into big pieces
- 2 large pieces of ginger (approx 4inch each)
- 8-10 large green chillies
- 1-1/2 cups yogurt
- 3/4 cup fruit vinegar (preferably black grape)
- 1/2 cup soy sauce low sodium light
- 1-1/2 teaspoon coarsely ground black pepper
- 1-1/2 teaspoons chicken powder (or then use brown sugar same quantity)
- 1/2 cup oil
- 2 tablespoons mustard paste
- FOR ROASTING
- 1 baking tray
- Aluminium foil as required
- Oil to grease tray
Instructions
- Wash and pat dry mutton pieces.
- Now apply all the marination ingredients to the meat. Cover with a plastic wrap and refrigerate for 3 days to marinate well. Keep pricking the meat and tossing the pieces in marination every now and then.
- On the third day grease a baking tray with oil and spread the marinated mutton pieces on it along with all the marinade. Tent with aluminium foil and bake at 130°C for 1 hour 30 mins. Keep turning the pieces after every 20 mins.
- Once done serve with your favourite sides.
