Ingredients
  1. 2 prime Ribeye steaks approx 200- 250 grams each
  2. 3 tablespoons butter
  3. 2-3 sprigs of mint
  4. 2-3 cloves garlic, cut in half
  5. STEAK RUB
  6. 1 tablespoon coarsely ground black pepper
  7. 1 teaspoon kosher salt or sea salt
  8. 1 tablespoon smoked paprika
  9. BLUE CHEESE BUTTER
  10. 100 grams unsalted butter, softened
  11. 1-1/2 tablespoons blue cheese
  12. 1/2 teaspoons coarsely ground black pepper
  13. 1 teaspoon minced mint leaves
  14. 1/4 teaspoon garlic powder
  15. 1/4 teaspoon thyme, dried
  16. HONEY LEMON GLAZE
  17. 6-7 plums, halved.
  18. 3 tablespoons melted butter
  19. 3 tablespoons honey
  20. 3 tablespoons lemon juice
  21. 1/4 teaspoon ground black pepper
  22. 1/4 teaspoon sea salt
  23. 1/2 teaspoon chopped garlic
Instructions
  1. Mix together butter, blue cheese, black pepper, mint leaves, garlic powder and thyme. You can roll your blue cheese butter into a log in a sheet of parchment or you may fill it in silicon cube trays and freeze away.
  2. Stir together black pepper, sea salt and smoked paprika to prepare steak rub. Pat the steak dry with a kitchen paper and massage the steak rub into the meat. Let rest for 10 minutes.
  3. Heat a cast iron grilling pan till it begins to sizzles. Add some oil to the pan and place your steak in the pan pressing it with your hand. Let the steak cook on medium high heat for 3-4 minutes on one side. Place 2-3 garlic cloves and sprigs of mint in the pan as the steak cooks. Add a tablespoon or two of butter and bast the steak with butter continually. Now carefully flip the steak over and let the other side cook for another 3 minutes. Continue basting the steak with butter while it cooks.(For a well done steak cook 4 minutes each side).
  4. Carefully remove the steak on a wooden board-place a scoop of your prepared blue cheese butter immediately on the Steak and let it rest untouched for 10 minutes. DO NOT CUT THE STEAK as it rests for it is important for the protein to reabsorb its juices after cooking or else the meat would lose all its moisture and juiciness.
  5. Now Place plum halves in a baking tray. Brush them with melted butter. Whisk together honey, lemon juice, chopped garlic, salt and black pepper. Brush the glaze generously over plums and place them under a preheated grill for 5 minutes.
