This week, give a try to something spicy and crispy. A prefect filling treat, fried and served with a creamy cheesy Dip……mmmmmouth watering and delectable winter snack or a quick fix for an untimely hunger pang.
The best part about this recipe is, you can freeze the stuffed and coated chicken strips and fry them whenever you wish so.
Coating any protein in flour, gives it a nice crunch and texture. But we can’t ignore the flavours required to bring in that perfect taste to the finished product. Seasoned flour is thus used in this recipe. Adding salt, black pepper, red chilli powder and chicken powder to flour, sealing it in zip lock bags and refrigerating , saves a whole lot of hassle and time . Whenever you wish to coat any protein in flour, just pull out the seasoned flour from your fridge and get going.
Bread crumbs used in this recipe are JFC Panko Bread Crumbs Japanese bread crumbs, for that extra crunch and crispiness that lasts for hours.
- 2 boneless chicken breast fillet flattened and cut into 2 inch wide strips
- 1 teaspoon crushed garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons vinegar
- 1 tablespoon soy sauce
- FILLING
- 5 tablespoons cream cheese
- 1/2 teaspoon chicken powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon red chilli flakes
- 1/2 teaspoon oregano
- 1 teaspoon chaat masala
- COATING
- 1 cup seasoned flour
- 3 eggs, lightly beaten
- 1 cup PANKO bread crumbs
- 1/2 cup roasted sesame seeds
- Oil for deep frying
- SEASONED FLOUR
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon red chilli powder
- 1 teaspoon chicken powder
- MINT CHEESE DIP
- 5 tablespoons mayonnaise
- 3 tablespoons cream cheese spread
- 1 tablespoon chopped mint leaves
- 1 tablespoon coriander leaves chopped
- 3 green chilies chopped
- 1/4 cup milk
- 1/2 teaspoon cumin powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon chicken powder
- 1/4 teaspoon salt
- 3 tablespoons lemon juice
- 1 teaspoon chilli sauce
- 1 teaspoon sugar
- Marinate chicken strips in salt, garlic, black pepper, vinegar and soy sauce. Let marinate for at least 3-4 hours
- Prepare the filling by whisking oregano, chaat masala, chicken powder, black pepper and red chilli flakes in cream cheese. Add salt if required.
- Place a little stuffing on each strip and fold it over. Place the stuffed strips in the freezer for the filling to set .
- Coat each strip in flour then in beaten eggs and finally roll it in bread crumbs and sesame seeds. Deep fry.
- Process all the ingredients for the dip in a food factory and serve with spicy chicken crispers.
