Orange peach cheesecake …. ! Does it ring a bell? A famous and all too hit combo that tastes perfect and delectable in a rich cheesecake.

Before we get to the actual recipe, here are some pro tips and secrets to make the best cheesecakes.

To begin with, you need to know the type of cream cheese you are using. People often confuse cream cheese with cream cheese spread, that comes bottled and has a good amount of salt. There are several brands available that produce cheese spreads sold in hard tubs and bottles.  Now let’s get to the other and actual cream cheese, required to make real rich and creamy cheesecakes. For the matter of fact any brand cream cheese which is solid and comes in block/ cubes and/ or triangles, would do a fine job . But to talk about the best brand, which lends your cheesecake the perfect texture, taste and richness is none other than Philadelphia.

Second most important ingredient of a cheesecake is Cream. We prefer using good quality full fat fresh cream or better still double cream or whipped topping. One non diary option, which yields perfect results is Rich’s Base Rich Non Dairy Whip Topping Base

A standard way to do a cheesecake is in a springform pan. But for that perfect finish to your cake and to avoid destroying your set cheesecake while removing the rim of a springform pan, cake setting rings are the best option.

For the cookie base of your cheesecake, you may crush the Digestive Biscuits in a zip lock bag, but what I love to do is, process it with butter in a food processor.

After pressing down the digestives into the base of your pan , you may either bake it for 15 minutes or let it set in the freezer.

Ingredients
  1. FOR THE BASE
  2. 3 cups digestive biscuit crumbs
  3. 75 grams melted butter
  4. FOR THE CHEESECAKE
  5. 1 cup peach cubes
  6. 3/4 cup fresh orange juice
  7. 1 teaspoonful orange zest
  8. 1 teaspoon vanilla extract
  9. 1/2 teaspoon orange essence
  10. 500 grams cream cheese
  11. 2 cups whipped cream
  12. 3/4 cup castor sugar
  13. 3 tablespoons levelled gelatine dissolved in 1/4 cup warm water
  14. FOR TOPPING
  15. Peach slices
  16. 1 Packet orange Jell-O
Instructions
  1. Process digestive biscuits as melted butter together and press it down in the base of a cake ring, placed over a cake board or platter. Bake the base in a pre heated oven at 180 degrees for 15 minutes. Or you may let it set in the freezer.
  2. Whip cream and set it aside.
  3. In a large mixing bowl, whip cream cheese till light and fluffy. Add sugar, orange essence, vanilla extract, orange zest, orange juice, and dissolved gelatine to cream cheese and mix well .
  4. Finally fold the whipped cream and peach cubes into the cream cheese mixture.
  5. Pour the cheesecake mixture over the set biscuit base. Cover it with aluminium foil and place refrigerate for 4-6 hours or till set.
  6. Place peach slices on top of the set cheesecake.
  7. Prepare orange jelly as per instructions on the box and pour it over the cheesecake and peach slices. Be careful not to pour HOT jello mixture over the cheesecake. Stir away the steam and heat a bit and then pour it over .
  8. Finally rub a wet towel around the cake ring and carefully remove it .
