You know what’s utterly blissful in these winter nights, a steaming mug of your favourite flavoured latte or cappuccino with some moist and delightfully crunchy crusty Coconut Macaroons. But how about turning it up a notch ..with some zesty orange kick and intense dark chocolate chips….??? You have to take my word for it, they turn out to be incredibly flavorous and irresistibly sapid. The best part is these will give you the absolute  sense of euphoria owing to the ultimate no fail method. Simple ingredients and a recipe which you can never go wrong with.

ORANGE CHOCOLATE CHIP AND COCONUT MACAROONS RECIPE

Ingredients
  1. 3 cups desiccated coconut
  2. 1 (14oz) can sweetened condensed milk
  3. 1 tablespoon orange zest
  4. 2 tablespoons orange juice
  5. Few drops orange extract
  6. 1 cup dark chocolate chips
  7. A speck of orange gel colour
  8. 2 egg whites
  9. Pinch salt
  10. 4 tablespoons castor sugar
Instructions
  1. Line a baking tray with parchment paper and grease it with butter. If you skip it you will be in trouble as the condensed milk caramelises and tends to stick really bad to the paper.
  2. Preheat your oven at 120°C.
  3. In a large mixing bowl stir together coconut, condensed milk, orange zest, orange juice, orange extract, chocolate chips and orange colour gel. Mix it all very well with a rubber spatula.
  4. In a clean dry bowl beat egg whites with a pinch of salt. Once they get to soft peaks start adding castor sugar, a tablespoon in a go and continue to beat till all the sugar is incorporated and the whites have stiff peaks and a gloss.
  5. Fold the beaten egg whites in the coconut mixture.
  6. Scoop out heaps of macaroon mixture on the lined and greased baking tray and bake at 120°C for 45-50 minutes. Once done turn off the oven and let them cool down in the oven. Remove on a wire rack and let cool completely.
