Christmas Specual Breakfast Enchiladas

Ingredients
  1. 8 flour tortillas.
  2. 1 cup grated cheddar cheese
FILLING
  1. 1 cup chopped sausages (use any cold cut meat of your choice)
  2. 4 eggs scrambled
  3. 1/2 cup sweet corn
  4. 1/2 cup chopped mushrooms
  5. 1/4 cup chopped capsicum
  6. 1/4 cup chopped onion
  7. 1 teaspoon chopped garlic
  8. 4 tablespoons oil
  9. 1 teaspoon dried oregano
  10. 1/4 cup chopped Parsely
  11. 3/4 cup tomato purée
  12. 4 tablespoons ketchup
  13. 1 teaspoon roasted ground cumin
  14. 1 teaspoon red chilli powder
  15. 1 teaspoon paprika
  16. 1/2 teaspoon black pepper
  17. Salt to taste
  18. 1 teaspoon chicken powder
  19. 3 tablespoons vinegar
  20. 3 tablespoons brown sugar
  21. 1/4 cup chopped jalapeños
ENCHILADA CHEESE SAUCE
  1. 50 grams melted butter
  2. 1 teaspoon chopped garlic
  3. 1 teaspoon garlic powder
  4. 1 cup milk
  5. 1 cup chicken stock
  6. 1/2 cup full fat cream
  7. 1/2 cup grated cheddar cheese
  8. 1 tablespoon cream cheese
  9. Salt and pepper to taste
  10. 1/2 teaspoon roasted ground cumin
  11. 1/2 teaspoon dried oregano
TO TOP
  1. 1 cup grated mozzarella
  2. Fresh chopped Parsely
Instructions
  1. Heat oil in a pan and sauté garlic, onion and capsicum. Once the vegetables sweat add in sausgaes, mushrooms, sweet corn and jalapeño.
  2. Start adding in rest of the ingredients for filling and let simmer on low heat till all the flavours come together. Finally fold in the scrambled eggs.
  3. Prepare the sauce. Heat butter in a saucepan and sear garlic. Whisk in milk, stock, cream and cheese. Add in garlic powder and seasonings. Once it comes to a boil remove from heat.
  4. To assemble place some grated cheddar cheese on the tortilla and add spoonfuls of the filling along the centre. Roll up tortillas and arrange in two 8x8 inch baking dishes.
  5. Spoon the prepare sauce over the tortilla rolls and spread a layer of mozzarella shreds atop tortilla rolls and sprinkle Parsely on it.
  6. Bake in a preheated oven at 180°C for 20 minutes.
