Forget using boxed brownie mixes. Here is one of my all time favourite foolproof basic brownie recipe. No fancy equipment required-quick and easy to put together. Decadent and gooey.

Ingredients
  1. 100 ml oil
  2. 1/4 cup plus 2 tbsps flour
  3. 100 grams dark chocolate
  4. 1/2 cup brown sugar
  5. 2 eggs
  6. 1 tbsp cocoa
  7. 1 teaspoon vanilla essence
  8. FOR THE GLAZE
  9. 200 grams dark chocolate chopped
  10. 200 ml tetra pack cream
Instructions
  1. Grease an 8x8 inch square pan and line it with a wax paper and grease it too.
  2. Sift together flour and cocoa powder in a bowl.
  3. Melt chocolate in a double boiler or in microwave in short bursts.
  4. In a large mixing bowl, with an electric beater at low speed mix together oil, brown sugar, eggs and vanilla essence. DO NOT OVER BEAT
  5. Beat in the melted chocolate and flour mix. Pour batter in the prepared pan and bake in a preheated oven at 180 degree Celsius for 20 minutes or till just set and a few crumbs stick to a skewer inserted.
  6. Let cool in pan and then invert over wire rack. Prepare the glaze.
  7. Scald 200 ml of cream in a saucepan remove from heat and add 200 gms of chopped dark chocolate to it. Stir until well combined. Pour the glaze over the baked brownie.
