It’s been quite a long while since I last posted a recipe for you all. Life had been too busy lately. Nonetheless I am back again with loads of new and exciting stuff, not to be forgotten most of quick and easy to put together recipes that are ideal for this time of the year; summer and Ramazan, I know we are always on the hunt for hassle free quick fixes for our elaborate Ramzan meals.
Here is one such simple yet attractive and appetizingly delectable snack. Do try it and leave your feedback.
PIZZA CRACKER CROSTINI

Ingredients
- FOR GRILLED CHICKEN CHUNKS
- 250 grams of chicken breast fillet cut into bite size chunks
- 1/2 teaspoon minced garlic
- 1/2 teaspoon chilli powder
- 1/2 teaspoon red chilli flakes
- 1/2 teaspoon cumin powder
- Salt to taste
- 1 teaspoon sugar
- 1/2 teaspoon Italian seasoning
- 3 tablespoons oil
- 3 tablespoons Greek yogurt
- TO ASSEMBLE CROSTINI
- 15-20 Cream Cheese Crackers
- 1 cup ready to use pizza sauce
- 3 tablespoons ketchup
- 12 pepperoni slices shredded and microwaved for 2 minutes.
- 1 large onion chopped
- 1 medium capsicum finely chopped
- 1/2 cup black olives
- 1/2 cup shredded mozzarella
- 1/2 cup shredded white cheddar cheese
- TO SPRINKLE
- 1 tablespoon red chilli flakes
- 1 tablespoon oregano
Instructions
- Heat oil in a pan and add chicken chunks to it. Stir fry at high flame for a minute. Next add in garlic, red chilli powder, red chilli flakes, cumin powder, salt, sugar, yogurt and Italian seasoning. Let all cook through for 5-7 minutes.
- In a small bowl stir together ketchup and some pizza sauce.
- To assemble apply some sauce on cream cheese crackers. Sprinkle some mozzarella and cheddar shreds and place chicken chunks, pepperoni, onion, capsicum and olives on it.
- Sprinkle some oregano and red chilli flakes on top.
- Grill in a preheated oven at 200°C for 5 minutes or till the cheeses melt.
