A time saving recipe. Put together the casserole a night prior and bake half an hour before serving.

- 8 flour tortillas.
- 1 cup grated cheddar cheese
- FILLING
- 1 cup chopped sausages (use any cold cut meat of your choice)
- 4 eggs scrambled
- 1/2 cup sweet corn
- 1/2 cup chopped mushrooms
- 1/4 cup chopped capsicum
- 1/4 cup chopped onion
- 1 teaspoon chopped garlic
- 4 tablespoons oil
- 1 teaspoon dried oregano
- 1/4 cup chopped Parsely
- 3/4 cup tomato purée
- 4 tablespoons ketchup
- 1 teaspoon roasted ground cumin
- 1 teaspoon red chilli powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- Salt to taste
- 1 teaspoon chicken powder
- 3 tablespoons vinegar
- 3 tablespoons brown sugar
- 1/4 cup chopped jalapeños
- ENCHILADA CHEESE SAUCE
- 50 grams melted butter
- 1 teaspoon chopped garlic
- 1 teaspoon garlic powder
- 1 cup milk
- 1 cup chicken stock
- 1/2 cup full fat cream
- 1/2 cup grated cheddar cheese
- 1 tablespoon cream cheese
- Salt and pepper to taste
- 1/2 teaspoon roasted ground cumin
- 1/2 teaspoon dried oregano
- TO TOP
- 1 cup grated mozzarella
- Fresh chopped Parsely
Instructions
- Heat oil in a pan and sauté garlic, onion and capsicum. Once the vegetables sweat add in sausgaes, mushrooms, sweet corn and jalapeño.
- Start adding in rest of the ingredients for filling and let simmer on low heat till all the flavours come together. Finally fold in the scrambled eggs.
- Prepare the sauce. Heat butter in a saucepan and sear garlic. Whisk in milk, stock, cream and cheese. Add in garlic powder and seasonings. Once it comes to a boil remove from heat.
- To assemble place some grated cheddar cheese on the tortilla and add spoonfuls of the filling along the centre. Roll up tortillas and arrange in two 8x8 inch baking dishes.
- Spoon the prepare sauce over the tortilla rolls and spread a layer of mozzarella shreds atop tortilla rolls and sprinkle Parsely on it.
- Bake in a preheated oven at 180°C for 20 minutes.
