Ingredients
- 1/2 packet Penne, boiled
- 250 grams chicken breast fillets (Approx 2)
- 1/4 cup oil
- 3 tablespoons Worcestershire sauce
- 3 tablespoons ketchup
- 3 tablespoons Franks Hot Wing Sauce
- 1/2 teaspoon mustard paste
- 1 teaspoon Paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon minced garlic
SAUCE
- 25 grams butter
- 1 tablespoon minced garlic
- 1/2 cup sliced mushrooms
- 2 cups chopped spinach
- 3 cups milk
- 4 tablespoons cream cheese
- 1 cup cream
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon chicken stock powder
- 1 tablespoon red chilli flakes
- 3 tablespoons Worcestershire sauce
- 1 teaspoon oregano, dried
- 1 cup grated Parmesan
Instructions
- In a bowl prepare the marinade. Whisk together oil, Worcestershire sauce, ketchup, hot sauce, mustard paste, paprika, salt, pepper and minced garlic. Place the chicken in the marinade and let rest for 2-3 hours
- Heat a griddle and grease with some oil. Place the marinated chicken fillets and apply some marinade on them. Let cook 3 minutes and then flip over. Apply more marinade and cook for another 3 minutes. Remove on a wooden board and let rest for 7 minutes.
- Meanwhile prepare the sauce. In a pan heat some butter and sauté garlic. Then add sliced mushrooms and spinach l. Cook for 2-3 minutes. Now add in milk, cream cheese, cream, salt, pepper, chicken stock powder, oregano, red chilli flakes, Worcestershire sauce and grated Parmesan. Bring the sauce to a boil and add in the cooked pasta.
- Remove pasta in a serving platter and top with grilled chicken with cuts across the fillets.
