Spicy, tangy and succulent chicken legs marinated overnight in a classic blend of spices baked in a foil tent and served with edible gold leaf, makes this dish gourmet enough for any celebratory meal. 

This recipe is simple to put together yet appealingly elegant and absolutely magnificent. You just mix in all the spices and your oven does rest of the work.

 

 

Overnight marination is the key to this succulent and flavoursome chicken. Bake these in a foil crumbled to form a basin covered with another sheet of foil to tent the chicken. 

I have used potatoes while roasting chicken. You may add in vegetables of your choice as well.

 

 

 

 

 

 

 

Roasted Greek Style Chicken Drumsticks

Ingredients
  1. 6-7 chicken drumsticks
  2. 1 tablespoons chopped garlic
  3. 1 teaspoon mustard paste
  4. 4 tablespoons yogurt
  5. 4 tablespoons oil
  6. 1 teaspoon red chilli flakes
  7. 1/2 teaspoon thyme
  8. 1 teaspoon red chilli powder
  9. 1/2 teaspoon black pepper
  10. 2 tablespoons white vinegar
  11. 1 teaspoon mixed Italian seasoning
  12. 1/2 teaspoon oregano leaves
  13. 1-1/2 teaspoons salt
  14. 2 tablespoons sugar
TO BAKE
  1. 2 sheets of aluminium foil
  2. 2 large potatoes cut into an inch cube
  3. Other vegetables of your choice
Instructions
  1. Mix together all the ingredients for the marinade and let chicken sit in the spice mix overnight in the fridge.
  2. Place a sheet of foil on a baking tray. Place chicken along with marinade in the centre of the foil. Add diced potatoes or other vegetables as well. Curl up sides of the foil to form walls. Place another sheet of foil on top to tent the foil bowl beneath. The upper foil should be loose and should not touch the chicken.
  3. Bake at 150°C for 30-35 minutes. Remove from oven and open the foil. Bake uncovered for another 15 minutes till some of the water dries out.
  4. To serve I have applied some edible gold leaf on chicken pieces. This is purely optional.
