This week I thought of sharing with you all some savoury delight, which is sure to bring some variety to your range of bakes.
You all have had and made sweet muffins a lot, but today let’s spice it up with a delectable savoury muffin recipe. It is certain to be a hit at any of your tea parties and /or breakfast. There is a whole range of savoury muffins that are made in different regions of the world, but I am bringing you my own version of a classic chicken muffin. So bake along and enjoy.
To begin with, you will need cooked chicken. You may boil some chicken with seasonings and sauces and then shred it. Or else you may use chopped chicken sausages or bacon.
You may use any of the vegetables that agree with your taste buds like mushrooms, shredded carrots, chopped broccoli, cabbage, peas, chopped onions, tomatoes etc. I have used just some basic coriander, green chillies, onions and sweet corn.
The secret to perfect muffins is the correct order of things in your recipe method.
So first sift all the dry ingredients in one large mixing bowl . Add in the seasonings . Like so …
Now dump all the vegetables, chicken and cheese on the heap of dry ingredients .
Give it all a nice stir.
In another bowl whisk up the liquid ingredients . Pour in some melted butter. You may replace butter with oil.
Pour the liquid portion into the dry ingredients and beat till all are well combined.
Remember a muffin batter is way different than a cupcake batter. It will be thick and lumpy, like this.
Fill your muffin pan, with liners, 3/4 with the batter. Place a piece of cheddar cheese on top and bake till golden .
- 2-1/2 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 2 teaspoons salt
- 1 teaspoons chicken powder
- 1 teaspoon red chilli powder
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried mixed herbs
- 3-5 tablespoons chopped green coriander
- 1 large onion chopped
- 1 cup sweet corn
- 200 grams boiled chicken (boil with 3 tablespoons soy sauce-salt and pepper to taste)
- 7-8 green chillies finely chopped
- 200 grams cottage cheese crumbled
- 100 grams cheddar cheese to top
- 1 cup milk
- 2 eggs
- 100 grams melted butter or 1/2 cup oil
- Line a 12-muffin tray with paper liners. Preheat oven to 180 degrees.
- In a large bowl, sift together flour, baking powder and baking soda. Stir in salt, chicken powder , red chilli powder, garlic powder, black pepper and mixed herbs.
- To the flour mixture , add chopped onion, coriander , green chillies, sweet corn, shredded chicken and crumbled cottage cheese.
- In another bowl , whisk together milk, eggs and butter.
- Pour milk mixture in the flour mixture. Beat for a minute till all ingredients are well incorporated.
- Fill the muffin tray with the batter, top with some cheddar cheese and bake for 25 minutes or till a toothpick inserted in the centre of a muffin comes out clean.
