FOR DOUGH
  1. 2-1/2 cup flour
  2. 2 tablespoons sugar
  3. 1 sachet or 2-1/4 teaspoon yeast
  4. 1 teaspoon salt
  5. 3 tablespoons milk powder
  6. 1 egg
  7. 1/2 cup oil
  8. 1/2 cup warm milk
FOR STUFFING
  1. 2 tablespoons oil
  2. 1 large onion, minced
  3. 1 tablespoon garlic, minced
  4. 1 capsicum, finely chopped
  5. 1/2 cup chicken, boiled shredded
  6. 1/4 cup chopped jalapeño
  7. 1/4 cup chopped olives
  8. 3 tablespoons milk
  9. 1/2 teaspoon chicken stock powder
  10. 1/2 teaspoon ground black pepper
  11. 1/2 teaspoon red chilli powder
  12. 1/2 teaspoon red chilli flakes
  13. 1/2 teaspoon oregano leaves, dried
  14. 1/2 teaspoon salt
  15. 1/4 cup ketchup
  16. 1/2 cup grated cheddar cheese
FOR WASH
  1. 1 egg beaten
  2. 2 tablespoons black seeds or black sesame seeds
Instructions
  1. In a large mixing bowl whisk together flour, sugar, yeast, salt, milk powder. Add in an egg, oil and warm milk. Knead it all into a soft smooth dough. If required add a few splashes more of warm milk.
  2. Place the dough in a greased bowl and apply oil on the dough. Cover with a damp towel and keep in a warm corner of your kitchen to rise for 1 hour or till the dough is double in volume.
  3. Heat oil in a pan and sauté onions, garlic, capsicum and chicken. Add in chopped olives and jalapeño. Once heated through and soft add in the spices; black pepper, red chilli powder, red chilli flakes, chicken stock powder, chicken powder, salt, oregano and milk. Stir in ketchup.
  4. Once the dough has risen, take a small portion of the dough and flatten it on your palm. Place a spoonful of the stuffing in the centre, top off with a little cheddar cheese and pull the edges together to seal and roll the dough into a smooth ball. Place the dough ball with seam side down on a greased baking tray.
  5. Likewise shape all the buns with stuffing and place on the baking tray an inch apart from each other. Now brush the top of all buns with beaten egg and sprinkle black seeds on top.
  6. Bake in a preheated oven at 180°C for 20 minutes.
