So was I inspired to fuse some of the most enhanced flavours and rich recipes together; the Indian butter chicken along with an intense garlic twist to the French béchamel in an Italian pasta bake with layers of perfectly baked golden blistered cheddar, became an instant hit among family and friends.

I have used a blend of spices for my butter chicken meat sauce however you may also use store bought butter chicken spice mix.

BUTTER CHICKEN MEAT SAUCE
  1. 1 lb. coarsely minced chicken
  2. 1-1/2 cup homemade tomato purée
  3. 1 tablespoon ginger garlic paste
  4. 1-1/2 teaspoons paprika
  5. 1 teaspoon salt or to taste
  6. 1/2 teaspoon red chilli powder
  7. 1/2 teaspoon black pepper
  8. 1/2 teaspoon coriander powder
  9. 1-1/2 teaspoon roasted ground cumin
  10. 1/2 teaspoon hot spice powder
  11. 1/4 teaspoon ground fennel seeds
  12. 1/8 teaspoon ground caraway
  13. 2 tablespoons cream
  14. 1/4 cup butter, melted
GARLIC WHITE SAUCE
  1. 1/3 cup oil
  2. 2 tablespoons sliced garlic
  3. 4 tablespoons whole wheat flour
  4. 3-1/2 cups milk
  5. Salt to taste
  6. 1/2 teaspoon black Pepper
  7. 1 tablespoon Chicken stock powder
  8. 1-1/2 tablespoons Soy sauce
  9. 1/2 teaspoon Red chilli powder
  10. 1-1/2 tablespoons Red chilli flakes
  11. 1/8 teaspoon Mustard paste
  12. 1/2 cup cream cheese spread
TO ASSEMBLE
  1. 2 cups grated Cheddar cheese
  2. 1 packet penne pasta, cooked
Instructions
  1. Mix all the ingredients for meat sauce together in a bowl along with the minced chicken except for butter. Let the meat marinate for an hour.
  2. In a wok heat butter and add the marinated meat. Cook well till chicken is done and butter surfaces. Let simmer five minutes and set aside.
  3. Prepare Garlic white sauce. Heat oil in a pan and fry sliced garlic. Right when it gets aromatic and light golden add in flour and keep stirring till it gets a nice light brown colour. Add milk a cup at a time and use a whisk to keep dissolving any lumps formed. Once smooth add in all milk. Keep whisking as you continue to add other ingredients: cream cheese, mustard paste, soy sauce, red chilli powder, chilli flakes, black pepper, chicken stock powder and salt. You have to keep the consistency of your sauce runny. Do not let it get too thick. Now mix your pasta in the sauce.
  4. Spread the cooked minced butter chicken in a large 13x9 casserole dish or an 8x8 dish along with a small good for two dish. Spread a layer of grated cheese on chicken. Then a layer of pasta in garlic sauce. Cover the dish generously with grated cheddar.
  5. Bake in a preheated oven at 180°C for 20 minutes or till the cheese melts and gets nice brown blisters.
